One year of wood aging has given this wine its toasty character. It is balanced with the red-cherry fruit and acidity. Named after the constable who controlled the castle of Sancerre in the Middle Ages, the wine is dense with tannins as well as the fruit. It should be ready to drink, although it does seem on the dry side.
